Our cookie dough production facility is AIB (American Institute of Baking) approved.  Facilities approved by the AIB have a written allergen program.   For instance, peanut butter cookie dough can only be produced at the end of a production day, or week.  The equipment must be thoroughly washed before any other variety of cookie dough can be made.
